I got 3 1S 500mAh LiPos. Charging them in parallel would be 3A at 2C rate right? You add all capacities then double that to get 2C correct?

This charger I have, UP100AC Plus, has a 'fast charge' mode. Is that not recommended for lipo?

You can use fast charge if you are in a hurry, especially if you are only charging 1s packs. Nothing to balance on a 1s. But 2s and above, it is best to balance charge.
