The only thing I can think of is the blades on backwards. I have seen one where they were on backwards, and yes it will fly, but is putting way too much pitch into it. Other things to check is your swash where it rides on the main shaft. Make sure it slides nice and smooth. Same with all linkages on the head. And last, with the motor unplugged slowly raise the throttle up and down and make sure there are no dead spots in there. What is your pitch curve and throttle curve?
